Unlce Richard's Bird Seed Crackers

I believe crackers are a pantry staple; need a vessel for avocado? Cracker. Need something wheaty and crunchy to accompany some goat cheese? Cracker. About to faint because your blood sugar is low? Cracker. This is my uncle’s recipe, with a few modifications: you can bet your bottom dollar they are packed with good seeds that contain omegas, fats, and protein for brain and heart health.

Ingredients 

  • 1 ¼ cup whole wheat flour
  • 1/2 cup sesame seeds
  • 1/2 cup sunflower seeds
  • ¼ cup flax seeds
  • ¼ cup chia seeds 
  • 1 teaspoon salt
  • Tablespoon of honey 
  • 2 tablespoons (thinly chopped) butter from a happy cow
  • 1/4 cup olive oil
  • Ice Water

Process

  1. Whisk dry ingredients together in a bowl
  2. Mix in olive oil, honey, and butter with a fork 
  3. Slowly add ice water – just until everything is combined; can be slightly clumpy
  4. Line baking sheet with parchment, transfer dough to sheet 
  5. Roll out dough with a rolling pin until as ‘ thin as the dickens’: covering entirety of the baking sheet
  6. Use fork to poke holes, every inch or so
  7. Use pizza slicer to score crackers – they can be whatever size you like. I prefer Triscuit size
  8. Bake in a 350 degree oven for 15 minutes or until toasty brown — be careful, as they can quickly turn from toasted to burnt
